Buttered Sow Thistle

  • 4 big handfuls of sow thistle leaves
  • 3 tablespoons butter
  • Chicken broth
  • Pinch of ground nutmeg
  • 2 teaspoons flour
  • Pepper
  • Just a pinch of salt (optional)


  1. Chop the leaves into bite-size pieces.
  2. Heat the butter in a large skillet.
  3. Add leaves and stir for a minute.
  4. Add ½ cup chicken broth.
  5. Cover and simmer for 10 minutes, adding chicken broth when needed.
  6. Add a dash of nutmeg, pepper and 2 tsp flour.
  7. Just a pinch of salt to taste.

Stir, serve and enjoy
